This is the reason I’ve been missing for the last few days. Let me take a minute to explain: I had to get my life together after indulging in these easy oven baked jerk beef ribs. They are baked low and slow until fork tender and juicy to the bone. The seasoning on these ribs are just right- not too spicy but full of flavor. Do you understand why I needed a minute?
It all started with fresh beef ribs. That is dry brined!
Enter the Dry Jerk Seasoning recipe that I shared a few weeks ago.
Basically you sprinkle the rub on the ribs and you allow the spices to do the work for you.
The trick to making these ribs juicy is braising them in stock. I know! Say what??!! Sometimes, with oven baked ribs they tend to come out dry because you do have to bake them for a long time. But to ensure that they do come out tender you add a little stock to the baking dish. That serves two purposes- it tenderizes the beef and also doubles as the basting liquid and sticky sauce. Yup!
So these ribs seem to be a staple at every single family get together. And I should mention that we get together a lot. I love living in the same state as most of my family. I pretty much live within an hour of most my siblings. So we get to share many meals together.
We have our dinner staples: Biscuit, Cornbread, Mac and cheese, Green beans, Rice and peas, Some form of chicken and theseRibs. It seems that it is a Caribbean thing when so many items are on the menu for Sunday dinner but this is a watered down menu. Usually there are three kinds of meat (at least), 3-4 sides, 2 specialty drinks and 1 dessert. It is kinda serious.
So you get the picture- you have to come with your best recipes. Everyone knows that these sticky ribs are gonna make an appearance. I first made my copycat recipe when my grandmother was on vacation in Jamaica. I was so nervous. But it was silly because after a quick call with my grandmother I saw how easy it was to make.
It is almost too easy to make. Which is my favorite kind of recipe to be honest. I like looking like a culinary genius without the stress that follows. I’ve watched enough Chefs Table to never want to open my own restaurant. This blog is perfect. I get to cook great food and chit chat with you guys.

These easy oven baked jerk beef ribs are seasoned to the bone, slow braised, tender and juicy. These ribs will be a hit- fall off the bone perfection!
- 3 Lbs Beef Ribs silverskin removed
- 1/4 Cup Dry Jerk Seasoning (see recipe in post)
- 1 Tablespoon Oil
- 2 Cups Beef broth
- 3 Cloves Garlic Smashed
- 1/4 Cup BBQ sauce
- Fresh Herb for serving ( parsley, cilantro or thyme)
In a zip lock bag or large bowl- add the jerk seasoning and oil. Mix together to form a paste. Add the ribs and massage in the spiced to the meat. Let sit in the fridge for 2 hours or overnight.
Preheat the oven to 350 degrees. In a large oven safe dish place to ribs in a single layer. Add the broth and garlic. Cover the dish with foil and Put the ribs into the oven on the middle rack, close the oven door, and forget about the ribs for 3 hours.
At the 3 hour mark remove the dish from oven. Take off the foil paper and slim off most of the fat/oil. Using some of the cooking liquid- mix it with the BBQ sauce. Just enough to thin out the bbq sauce (approx. 3 tablespoon to 1/4 cup). Baste the ribs with the sauce. Place the ribs back in the oven and turn on the broil setting for 5 minutes. Watch the ribs carefully as you want some charring but not burning.
Remove the ribs and sprinkle with more sauce and fresh herbs. Enjoy!
