Ingredients
  • 2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cardamom
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon freshly grated nutmeg
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 1/4 cup buttermilk
  • 3 super ripe bananas about 1 1/2 cups
  • 1 tablespoon molasses
  • 7 ounces unsalted butter melted and browned
  • Zest of 1 orange
Instructions
  1. Brown butter: Melt butter in a saucepan over medium heat. Butter will begin to foam and crackle as it melts. The butter will begin to brown, watch carefully. Stir the butter as it cooks. When the butter browns and begins to smell nutty, remove the pan from the flame and transfer the butter to a bowl. Allow to cool.
  2. Prep: Place the oven rack in the center slot and preheat to 350 degrees F. Grease and flour a 9×5-inch loaf pan and set aside.
  3. In a large bowl, whisk together the dry ingredients- flour, sugar, baking soda, salt, cinnamon, and nutmeg.
  4. Smash the banana and molasses together in a bowl. Whisk in eggs, vanilla extract, and buttermilk. Whisk in the cooled browned butter.
  5. Add the wet ingredients, all at once to the dry ingredients. Fold together ingredients, but try not to over stir.
  6. Pour in the batter into prepared loaf pan. Bake for 50 minutes to 1 hour, or until a skewer inserted into the center of the loaf comes out clean. I start checking at the 45 minute mark. Remove pan from the oven and allow to sit in the pan for 10 minutes, before inverting onto a wire rack to cool completely.
  7. Serve slightly warm with butter because why not! Enjoy!
