Shaved zucchini noodles are perhaps one of my favorite ways to have zucchini. Not to mention that it is topped this creamy avocado mint sauce. So addicting.
Shaved Zucchini Noodles

  • 3 large zucchinis ends removed
  • sprinkle of salt
  • 1 Tbsp. butter
  • Pesto
  • 1 large avocados peeled and pit removed
  • 1/4 cup packed fresh mint leaves
  • 1/4 cup almonds
  • pinch red pepper
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon ground black pepper
  • 3 cloves garlic minced
  • 3 Tablespoons extra virgin olive oil
  • 1 Tablespoon fresh lemon juice
  • zest of 1 lemon
  1. In a pot bring water to a boil.
  2. Use a vegetable peeler to peel long ribbons of zucchini.
  3. Add the zucchini and stir around in the pan for 1 to 2 minutes. Make sure that once the zucchini is limp you drain the water off. Sprinkle in salt and pepper.
  4. In a food processor or blender toss in all the ingredients for pesto and pulse until the pesto becomes creamy.
  5. Add the parmesan/peccarino and Serve within a few minutes, before the zucchini get too soft!
  6. Note: drain well because zucchini will spring additional water.
