  • 1 can chick peas drained
  • 1 pack mini gnocchi cooked to package direction
  • 1 small onion
  • 2 garlic cloves
  • 1 roasted red pepper
  • 1 large tomato
  • 1/2 cup parmesan
  • 1/2 cup half and half
  • 4 oz fresh mozzarella
  • 3 sprigs thyme
  • 1/2 cup broth
  • pinch of sugar
  • 1/4 cup chopped sun-dried tomatoes
  • 1 teaspoon red pepper flakes
  • salt and pepper to taste
  1. Place the roasted red pepper, garlic, tomato, sun-dried tomato and onion in food processor. Pulse until everything becomes a puree.
  2. Cook the gnocchi according to package direction. Pre-heat oven to 350 F.
  3. In a oven safe pan add the puree. Turn the stove to medium-high. Add thyme, sugar, red pepper flakes, broth and half and half. Allow to reduce- about 5-7 minutes. Add gnocchi to pan. Top with sliced mozzarella and Parmesan.
  4. Place in pre-heated oven. For about 8 minutes. Until the cheer has melted.
