Summer is in full swing in the sunshine state. that means a few things are happening all at once: everyone is at the beach, everyone is kinda low-key made that it feels like 150 degrees by noon, and everyone is making limeade by the bucket full. My neighbor has a lime tree, so sometimes I get bags of limes. I’m not complaining because I literally cook everything with lime juice. It is just so bright and happy. Enter —- strawberry coconut limeade!! it is bright from the fresh strawberries, slightly tart from the lime juice and delightfully creamy from chilled coconut milk. It is so good y’all.
growing up, I had a huuuuuuuuge lime tree in my front yard. So our neighbors would just pass by and pick enough for their limeade. which by the way was made fresh every day with tons of ice. Because once again it literally feels like 150 degrees outside with no breeze. Can you tell I’m mad about the lack of a breeze?
So I made this recipe with the kids yesterday. I had enough to pass some on to our friends. I just love seeing the pride on the kids face when they handed out their jugs of happiness. That is literally what they named this drink. How cute?
Usually limeade is made with a fruit, lime juice and a simple syrup.But seeing that I am on a mission to add coconut milk to everything that I consume ( and I’m not mad about it either)- I had to do it. I really really did.
And did I mention that all of this takes place in a blender? Yup, It all goes down in the blender. So two things happens at once- I don’t have to cut up strawberries into tiny pieces and Clean up is a breeze. No strawberry stains on my countertop. Winning!

This strawberry coconut limeade recipe is the perfect drink for warm summer days. Make this delightfully refreshing drink today.
- 2 cups strawberries
- 3/4 cup lime juice
- 5 cups water
- 1 can coconut milk
- 3/4 cup brown sugar or white
- Extra strawberries for topping (1/2 cup)

Prep: In a medium saucepan combine sugar and 1 cup of water. Bring to a boil, stirring, until sugar has dissolved. Allow to cool.
Add the simple syrup, strawberries and fresh lime juice to a blender and blend until smooth.
Add the mixture to a large pitcher, then add the coconut milk and sliced strawberries.
Stir everything well to combine and enjoy!
