I think my husband is the biggest chicken wing fanatic that I know. I mean it is borderline becoming a problem. These wings might just be his happy place and I can’t say that he is wrong. I might have(definetley) had these everyday for dinner for two days straight. I’m not going to admit that I woke up in the morning craving baked parmesan chicken wings for breakfast. That’s a little weird, right?

I used a dry brine for these wings. Basically a dry brine is when you put dry seasoning on your meat of choice and allow the meat to soak up all those flavor.

When I saw this on cooks illustrated I was skeptical. I have had baked wings before and they are never as good as the fried wings, however this recipe has a surprising ingredient…. baking powder. Yup, you heard me right baking powder and trust me it made all the difference in the world.

The main upside for baked wings is that you lose most of the fat. Which is a big plus in my book. I love food that still retains all the things I loved about them in the first place but they have waaaaaaaaaaaaaay less of the bad things. Make these for weeknight wings craving or for any gathering. People will love you for it. They will never know that it is baked and a healthier option.

Crispy Parmesan Chicken Wings

Ingredients

  • Baked Parmesan wings
  • – 4lbs Wings
  • – 1/2 tsp cumin
  • – 1 tsp garlic powder
  • – 1/2 tsp kosher salt
  • – 1 tsp paprika
  • – 1 tsp onion powder
  • – 2 tbsp Baking Powder
  • – 1/4 cup Parmesan for sprinkling
  • SAUCE
  • 1/4 cup fresh parsley
  • 3 cloves garlic
  • 5 tbsp butter
  • 2 sprigs of fresh thyme
  • pinch of salt

Instructions

  • Pre-heat Oven to 250 F.
  • Dry wings with a paper towel. Combine the dry ingredients in a bowl. Place wings in a freezer bag with dry ingredients and shake. Allow to sit in fridge overnight or for at least 1 hour. Place wings on oven safe wire rack .Bake wings for 30 minutes. Turn up oven to 450 F and bake for 50 minutes turning wings half way through the baking process.
  • In a medium saucepan place all ingredients on medium low until butter is fully melted. Cook for about 1-2 until the garlic has lost the harsh bite.
  • Toss in Butter sauce then sprinkle with Parmesan

    Made them for Super Bowl along with Hot wings, no one bothered with the hot wings! They are on demand list for dinner time now, making a batch tonite! Even my husband who is a die hard fried wings with hot sauce man loves them! Thanks for the recipe it’s a winner!!!!

    Oh my gosh, these are pheeeenomenal! I have used the baking soda/salt dry brine before, but it was in a much higher proportion so that the finished product was saltier. I like the addition of the other spices. At the end, I tossed the wings with the butter, threw them back on the baking pan, sprinkled them with the parm, and put under the broiler for a quick few. Had it with a big tossed salad with pom seeds and candied pecans. Oh! Sooo good! Thanks!

    I was planning on making these for the Superbowl, but my wings weren’t thawed in time. So I made them for dinner tonight. I didn’t make the dipping sauce, and they do not need it. They were delicious! Thank you for the recipe, this is definitely a keeper!

    I did these wings for dinner tonight and they were delecious! They were super crispy and flavorful and i didnt even bother with a dip this time. Next time though ill have a little cool ranch on the side.
