Creamy Goat cheese mushroom gnocchi is the perfect way to add a grommet touch to a quick week night dinner. The gnocchi is pillowy soft, the sauce is creamy and tangy. If you need to find me I’ll be in my kitchen eating this forever. AMEN!

And did I mention this creamy goat cheese mushroom gnocchi is done in under 10 minutes. In 4 minutes the gnocchi is cooked and in another 5 minutes it is ready to be devoured. Yes, please!!!

So have you ever wanted, craved, dreamed, borderline obsessed over a dish for days? Well, I have. I made this for my best friends birthday 2 weeks ago. It is what food dreams are made of. I could eat this for like I don’t know… Forever!!

So let’s talk me through my foodie haze. The gnocchi is tossed in a creamy and tangy goat cheese sauce. The addition of the mint on top of all those over the top flavors makes each bite even more amazing than the last.

Oh the levels! I literally cannot. Mushroom in cream is perhaps one of the most amazing flavor combos ever.

Note: You can omit to goat cheese and mint– add some parmesan and parsley. It will still be a winner, but trust me on this.

Ingredients
  • 1 Tablespoon Butter
  • 1 Tablespoon Olive Oil
  • 3 Tablespoon Heavy Cream
  • 1 Tablespoon Thyme
  • 16 ounces Fresh Sliced Mushrooms
  • 24 ounces Gnocchi
  • 1/4 cup Mint chopped
  • 4 oz Goat Cheese
  • 3 gloves Garlic
  • 1 shallot chopped
  • salt and pepper to taste
Instructions
  1. Prepare gnocchi according to package directions.
  2. Melt 1 Tbsp. butter and oil in a large skillet over medium-high heat. Add mushrooms, cook for 3 minutes or until lightly browned. Add shallot,thyme and garlic; cook for 2 minutes or until shallots are transparent. Add 3 Tbsp. heavy cream to skillet; cook for about 1 minutes. Add gnocchi; gently toss. Stir in goat cheese, garnish with mint. Salt, and pepper.

    I’m literally eating this as I write this. I didn’t know how it was going to turn out but my goodness it is so creamy and good! I added a little more cream than it says and a little less goat cheese (years of milking goats and I’ve never gotten quite used to the flavor) but it’s super good! Will be adding this to my rotation of recipes!

    Just made this tonight and had to say it was a tasty meal but made some additions. I added a 1/2 cup of white wine to the mushrooms and shallots and found that it needed way more cream. At least a 1/2 cup and next time would cut way back on the thyme, (it’s a strong spice with a heavy flavor). Plus I mixed regular mushrooms with shiitake and it gave it a lot of texture and flavor and added about two handfuls of fresh spinach torn. I agree with another post that unless you LOVE goat cheese 1/2 – 3/4 is PLENTY! It too has a strong flavor and can easily become overwhelming. I used 3/4 and it still kind of overwhelmed the dish. I would also cut back on garlic, (it was the only thing my husband complained about, to much garlic). I also topped it off with some toasted pine nuts I had before serving and I think walnuts would be amazing to! I love to find new recipes to inspire making dinner and this was definitely one of them! Thank you for sharing!

    Hmm, did you mean 4 ounces of goat cheese? I just made it and it was way too much! The flavor was great but way too much goat cheese, I’m going to definitely cut it in half next time, at least and also mince the garlic. Thanks for the recipe!

      I have to confess, I was too Charley. I thought that gnocchi was super fancy and super time consuming but it isn’t. I just pretend that I slaved over the stove all day to impress people. Hahahahaha!!!
