This super green pea puree is a protein-packed, naturally sweet, vitamin-rich alternative to mashed potatoes. I have made this almost every night all week. And I’m still shocked every time I make it by just how good it is. And simple too. Did I forget to mention it pulls together in less than 10 minutes? Well I think that is the best part.
Gorgeous right? Pea Purée is a delicious side dish to serve with almost all kinds of meats. It is particularly lovely with fish in my opinion.
I mean come on. How can this be real? It is like real life art. Full confession, I like to toss these little jewels in every meal.
It is almost deservingly sweet. You might even think sugar is added but I have said it before and I’ll say it again- Peas are a super food. And they are in season right now. But if you can’t find fresh peas- frozen peas are a great substitute. It tempts even the most reluctant skeptic. Jade!
My big things was to not have the texture of baby food. So I left this puree a little chunky.
With this super green pea puree on your plate it will seem like spring, no matter what time of year it is. Make it and let me know what ya think? Did it give you super powers?
XOXO,
Ann
