This mango pina colda smoothie bowl recipe is the perfect way to start the day off right. It is like having a eternal summer.Ok, so it might be chilly outside. It isn’t summer. Winter is DEFINITELY coming. But thankfully, that doesn’t mean that we can’t have a little bit of sunshine in our mouths. And that is definitely what this is. I love smoothie bowls. What can be wrong with some chilled coconut milk, some frozen mangos, a little frozen pineapples and toasted coconut flakes? In the words of one of my favorite songs “I don’t see nothing wroooooooonnnnng” with a little mango pina colada smoothie bowl.

Smoothie bowls give me an excuse to be creative with colors and flavors and I’m really crafty so this is right up my alley. Now if you are new to smoothie bowls, just google it and feast your eyes on some of the most beautiful food creations ever. I am obsessed with them on Instagram. they make me happy.

Mangos are my favorite fruit. Hands down, without a doubt. My mom has 2 mongo trees in her back yard so we were never without mangos growing up. I remember one summer eating a whole bucket full of mangos. NOT. A. GOOD. IDEA.

This mango pina colada smoothie bowl is filled with the good stuff. FRUITS! I am planning on doing a laying off sugar for one month. Not because of a diet or anything but I found that over the holidays I really developed a sweet tooth. I mean cookie monster has nothing on me. So I just wanted to reset my body. I found that sweetening things with fruit is a lot easier than I thought.

Mango Pina Colda Smoothie bowl
Ingredients
  • 1 cup frozen mango chunks
  • ½ cup frozen pineapple chunks
  • 1 cup chilled coconut milk I used the light coconut milk
  • 1 table spoon lemon juice
  • Toppings
  • ¼ cup toasted coconut flakes
  • ¼ cup granola
Instructions
  1. Combine all the ingredients in a blender. Blend until smooth. Add toppings. Go wild!
  2. Note: I used coconut milk however you can use coconut water as well.
