The kids are officially on summer vacation. Yay! I feel like this is what I need. Some QT with the best human beings I know- my brat pack. So I have been craving some wholesome food. I’ve been addicted to super easy and fast food lately. It is summer after all. So I whipped up this pan-fried salmon and pea puree recipe. The pea puree is sweet and fresh- the vibrant green colour and the scent of fresh mint is just mouth watering. And how can you go wrong with salmon?
I love this time of the year because I generally get more time with the kids. It is not just the usual morning/ breakfast routine then the homework-dinner-bath-bedtime routine. I get to really spend some time with my loves. I generally spoil them. With my time. Because most of all that is all they really want. I get to slow everything down. I get to hear about Pokemon and Trolls. We get late night video games parties. Popcorn for dinner parties. Let’s watch daddy sleep through the movie parties. Breakfast for dinner parties.
Summer is just a big party. Can you tell I missed them? With grandma going through her treatment, things around here was a little crazy. I hardly got to see them these last few months. Cancer changes everything. In so many ways. I hardly got to cook. I hardly got to post on here. I missed posting. I missed you guys.
But I am here. And present. I’m still kicking. And Praying. And posting!
So seeing that my mom is going to be able to help more now. I should be able to get things back on track. Grandma is taking to the treatment so now it is a matter of her body fighting. And us waiting.
So let the games being. I got a few museum, zoo, nature trail passes. And the ever looming camping trip is drawing near. Having kids make you do things you never thought you would do. I was a full on city girl. I mean I grew up on a farm(in that we had chickens and grew tons of vegetable) but I never really thought of myself as a country girl until I got marry and had kids. Then everything changed, all of a sudden air quality and having a back yard was paramount. Go figure!
Okay so this recipe is the intersection of three recipes. Below is the recipe for this glorious Pan-fried Salmon. Also I posted to recipe for what my kids call the super green butter. And I am currently obsessed with this fresh super green pea puree.
Super Green Butter
Enjoy! And keep tagging me in your recipe pics!! I love it!
